Vegetarian and Vegan Meal Planning Ideas PLUS ... Dairy Free Muffin Recipe

In a vegan or vegetarian diet, it may take time to explore new foods and develop some form of routine to it. There are many different products on the market today for vegans and vegetarians to choose from - keep experimenting to find your or your families personal preferences and tastes.

You should be-able to find quite a good amount of vegetarian and vegan products at supermarkets, natural health food stores and co-ops.

When baking, you can use substitutes like egg replacers, cornstarch or bananas to replace eggs.

Soy, rice and nut milks are great replacements for cow's milk. Plus there are many other dairy alternatives around like: vegan cheese, yoghurts, frozen non-dairy ice creams, and cream cheeses. These are all easily sourced through health stores or supermarkets worldwide.

Vegetarians are able to maintain a very healthy diet eating any number of traditional meals or sweets minus animal by-products.

And you don't have to be a vegetarian to benefit from such things, even if you'd just like to cut down on animal by-products for the many health benefits involved or if you are lactose intolerant, have vegetarian friends you'd like to cook for or are trying to avoid cholesterol . . . you don't have to feel you will miss out on all those wonderful sweets and treats you feel you can't live without. Because cooking minus animal by-products is so simple and easy you won't believe it until you experience it for yourself.

So I urge you to try the below recipe for yourself and then decide if vegetarians just eat rabbit food or not. You might be surprised. And you might even be shocked that you won't even notice these muffins are not cooked using any eggs or diary.

** Dairy Free Choc Muffins

Ingredients:

1 cup water

1 tsp vanilla

1 Tbsp vinegar

1/3 cup vegetable oil

1 cup sugar

1 tsp baking soda

1/3 cup coconut

1 and 1/2 cups flour

3 Tbsp cocoa or carob powder

Method:

1. Pre-heat oven to 190C.

2. Mix first 6 ingredients in a bowl until blended through.

3. Sift the remaining ingredients and blend in bowl until just combined.

4. Bake for 15-20 minutes.

Servings: 6 large muffins or 12 smaller muffins

If you are not a vegetarian but are considering becoming one don't let the fear of eating egg or diary free stop you. If you already are a vegetarian or don't eat dairy or eggs for other reasons, and have not tried cooking sweets, you might want to try it. It's so simple and easy if you know how and have access to proven recipes.

Hummus Recipe

What's the best humus recipe? Well, for some, they like their hummus a little more firm and some like it a bit more creamy. However you like your hummus it is a delicious and nutritious snack that can go with chips, pita bread, (we like to crisp up our pita bread in the oven) or vegetables such as carrots, sliced red and green peppers, cucumbers and celery or any other veggie you can dip into a spread.

Hummus is made from chickpeas or you may run across some hummus recipes that call for garbanzo beans which are just the Spanish name for chickpeas. Hummus is the Arabic word for chickpea and it is a popular side dish found all over the world, but especially popular in the Middle East, the Mediterranean and India. Even though hummus is found and enjoyed all over the world, there is no agreed upon country of origin. However, it is know as one of the oldest prepared dishes in the world.

A standard hummus recipe consists of chickpeas, tahini (a required ingredient), olive oil, garlic (the more the better) salt and lemon juice. Variations of hummus can be created by adding other spices such as cumin and paprika, or other ingredients such as pine nuts, parsley, cilantro, roasted red peppers, basil pesto, roasted garlic, eggplant, ground pepper, spicy red pepper and the list goes on. Many grocery stores have started featuring a plethora of different types of hummus as this dish continues to become more and more popular.

We usually end up making our hummus recipe with a 15 ounce can of chickpeas, 2 cloves of garlic, a whole lemon, a half tablespoon of salt and 2 tablespoons each of both tahini and virgin olive oil. As you mix the ingredients up in your food processor, you can add a little water to get the consistency just the way to like it. We make it somewhat thick, but a Middle Eastern restaurant we frequent in town makes it fairly thin and we like that as well.

Hummus is one of the most popular dishes in all the world and it is a healthy and nutritious snack and complement to many different meals in a multitude of different cultures. If you haven't tried hummus, you don't know the delicious treat you are missing.

How to Make a Sensational Breakfast Menu with a Light Fluffy Pancake Recipe that Everyone Will Love

There's nothing like a nice full and filling breakfast in the morning.
A balanced breakfast with plenty of choice makes a great start to any day!

How hard is it for you to get your entire family together for a sit-down breakfast? Don't let breakfast become endangered, add some light fluffy pancakes to your menu and live a great life!

Pancakes are so versatile and easy to make. I will show you how easy it is for you to make light fluffy pancakes that are tasty and almost melt in your mouth.

These light and fluffy pancakes are great for kids of all ages as you can add just about any topping you like or simply eat them like cupcakes. They are not too sweet so you can enjoy the nostalgic taste of maple syrup on top.

You can use ingredients straight from the fridge - which makes this pancake batter recipe a great last minute breakfast item.

I recommend using an electric beater to save time when possible. Save your time for sharing some valuable moments with your entire family at your breakfast table.

-* Light and Fluffy Pancake Recipe *-

Preparation Time: Less than 10 minutes
Cooking Time: Approximately 5 to 10 minutes

Makes about two dozen pancakes.

Ingredients you will need:

- 1/4 cup butter

- 1/4 cup sugar (or icing sugar)

- 1 egg

- 1 1/4 cups self-raising flour (sifted)

- 2/3 cup of milk (light or low fat is ok, you can also just use water or a combination of water and milk)

- vanilla essence

Method:

- Beat butter and sugar until creamed or until butter is a lighter colour.

- Add the egg to the mixture, then add flour around the mixture and pour in the milk and vanilla essence.

- Mix all ingredients together until well mixed and smooth. If for some reason your pancake batter mixture is a little thick, stop the mixing and quickly add a little more milk or water. (If you are hand-beating the batter, start from the center of the mixture and beat in one direction only.)

The texture that you are looking for is a thick but liquid-y batter that you can easily pour onto the frying pan.

- Next, heat up your frying pan until it is hot. If you need to, add some oil to the pan. I use a French crêpe frying pan so I don't need to use any oil at all, but if you have to, try to use spray oil.

- Reduce heat and pour pancake batter onto pan to the size/es that you want.

- Let the pancake raise and brown slightly before flipping over.

When you flip the pancake over to cook the other side, you should see that the pancake is raising faster.

Make sure that the heat of the pan isn't too high. A good tip is to make sure that you don't see any heat smoke coming from the pan.

A safeguard way to ensure that your pancakes become light and fluffy is to cook on low heat, but I find that keeping the pan on medium low is usually ok. Just turn down the heat after a couple of batches to reduce pan temperature.

Here are some creative add-ons that you can use with your fluffy pancakes:

Blueberry Pancakes

- Add blueberries into the batter at the last minute.

Chocolate Pancakes

- Add 1 1/2 teaspoons of cocoa with the flour before mixing.

Choc-Chip Pancakes

- Cook your pancakes very thin on one side, sprinkle some choc-chips onto one pancake, flip another one over the choc-chips (so that it's sandwiched) and continue cooking on low heat. Turn over and cook the other side.

Almond Pancakes

- Add flaked almonds to the mixture at the last minute.

Recipe For Moist Banana Bread

What do you do with bananas that are going ripe more quickly than your family can eat them? Make Banana Bread! It's great as a after school snack, lazy winter morning breakfast or dessert with your favorite meal. It's a comfort food that no one willingly passes up. It's pleasant fruity aromas filled the house and bring every one to the kitchen asking, is it done yet? Enjoy it warm, cold or even toasted.

Banana bread first made it's way in to cookbooks in the 1930's. Shopkeepers and grocers would have recipes available for shoppers when they had too ripe fruit on their shelved to try to make a sale for the product before it hit the trash bin. With the resurgence of home baking in the 1960's it regained the popularity it once had. Unlike some other recipes it was straight forward and required very little skill to create.

Banana bread is a popular gift giving item during the holidays, making it's way onto many platters for family, friends and neighbors.

The following recipe will make the moistest Banana Bread you have ever tasted. It's easy and takes no special ingredients. For best results use very ripe bananas. Be sure there are brown spots all over the peels and mash them well.

Ingredients:

1- 1-1/2 cups mashed ripe bananas, about 3-4 bananas
1/2 cup melted butter
1 cup granulated sugar
1/4 cup milk
2 cups all-purpose flour
1-1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs
1 tsp vanilla extract
1/4 cup milk

1. Preheat oven to 350 degrees. Prepare greased 9 x 5 x 3 bread pan.

2. In a bowl, combined mashed bananas, butter, sugar and 1/4 cup milk. Mix to combine.

3. In a large bowl, sift together flour, baking powder, baking soda and salt. Add in the banana mixture. Beat with an electric mixer on medium speed for about 2 minutes. Add eggs, vanilla extract and 1/4 cup milk. Beat for about 1 minute on medium speed.

4. Pour batter evenly into the greased pan. Place pan in oven on the middle rack. Bake for 30-40 minutes or until toothpick or knife inserted in the middle of the bread comes out completely clean.

5. Remove from the oven and let it cool for 10 minutes, then remove from pan and let cool completely on wire rack.

For this recipe you can also use a 9 x 13 cake pan.

To add a different flavor use raisins or add pecan or walnuts. For the chocoholic try adding chocolate chips. Top with powder sugar or a cream cheese frosting.

If you have ripe bananas but have no time for baking, they can be frozen in a brown paper bag.

Healthy Veggie Spaghetti Recipe in 15 Minutes

This is a simple recipe which doesn't require much preparation and hard work. Nowadays, I feel that time is sometime which I am lack of. The amount of time I spend in projects or school's work has increased dramatically where as the time for me to explore new recipe is scarce. Therefore, it is important to cook something that is quick and easy to prepare. This recipe definitely satisfy the criteria for "quick and easy". You can enjoy a healthy meal in just 15 minutes without any hassle. If you are like me who couldn't make time to prepare something healthy and nice for yourself or your family. Do give this recipe a try.

Ingredients

Serving size :1

1. Spaghetti, cooked

2. 1 handful (about 3 - 4 tablespoon) of mix vegetables (peas, corn, carrot)

3. 3 pieces of shitake mushroom, slice

4. 3 cherry tomato, slice

5. 3 cloves of garlic, mince

6. 1 chilli padi (optional), seedless and slice (add this if you like something spicy, you can choose not to sauté)

7. 2 teaspoon of olive oil

8. Salt

9. Black pepper

Directions

* Preheat the skillet over a medium heat. Add the olive oil and sauté the garlic until it is translucent.

* Add the mix vegetables, shitake, tomato and chilli into the skillet and sauté for 2 minutes. Add a little bit of salt for seasoning

* Pour in about 50 ml of water into the skillet and let it cook for another 2 minutes before adng the spaghetti. Mix the spaghetti well with the rest of the ingredient.

* Before serving, you can add additional salt and pepper.
